Vegan Broccoli Cheese Soup With Preparation Video!


Something people really tend to struggle with when transitioning to a plant based lifestyle is giving up cheese. Thankfully, if you have found yourself in that situation, I have a recipe for you! This recipe is almost too good to be true. It is rich, creamy, savory, and healthy. On top of that, it is extremely nutrient rich and is made completely from vegetables. The nutritional yeast adds a nice cheesy flavor in addition to your daily requirements for vitamin B12. Seriously, this soup is perfect. Enjoy!

2 tablespoons olive oil 1 medium onion, diced 3 garlic cloves, minced 4 cups vegetable broth 1 medium russet potato, peeled and coarsely chopped 1 medium carrot chopped 1/2 cup raw cashews 1 cup unflavored soy or almond milk 1/4 cup nutritional yeast flakes 1/4 cup vinegar based hot sauce 3 tablespoons white miso paste 4 cups broccoli florets (about 1 large crown) 2 tablespoons all-purpose flour (optional) Salt and pepper to taste
