Sometimes you come home from work or school really tired and you just want a super quick meal so you can enjoy it while relaxing on the sofa for the rest of they, we we have just the perfect recipe! It's really easy and takes no time to prepare.
No further do let's start with the ingredients and don't forget to follow the instructions.
Ingredients: (Preparation video down below)
300gextra-firm tofu
200grice noodles
1head ofbroccolicut into 1” florets
2carrotsjulienned
1red pepperjulienned
4garlic clovesdiced
oilfor frying
For the sauce
1tbsppeanut butter
2tbspsriracha sauce
1tbspbrown sugar
thumb ofgingergrated
1limejuice only
3tbspsoya sauce
1/4cupwater
For serving
2spring onionssliced
crushedpeanuts
wedges oflime
Instructions + The Video:
Prepare the tofu by removing as much moisture as possible by pressing down it, then drying with a tea towel or kitchen towel.
Slice the tofu into 1” chunks and fry in a pan with a little oil on a medium heat for 6 minutes. Then turn over and fry the other side for 6 minutes.
Meanwhile, prepare the rice noodles as per packet instructions.
While the noodles are cooking, combine the sauce ingredients in a small bowl.
Remove the tofu from the pan and set aside. Add a little more oil to the pan and fry the broccoli for 2 minutes. Then add the carrots and pepper, and fry for a further 3 minutes. Finally stir in the garlic and cook for 1 minute.
Drain the noodles and transfer to the frying pan with the sauce. Stir well to combine.
Add the tofu pieces to the frying pan, gently fold in and fry for another minute.
Serve with slices of spring onion, crushed peanuts and a wedge of lime.
