This is what I call an easy friendly Vegan dinner! to make it you'll need simple ingredients that I'm sure everyone has in their kitchen and mostly you'll need vegetables.

- 1 tablespoon oil
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- salt, to taste
- black pepper, to taste
- 1 potato, peeled and cubed
- 3 cloves garlic, minced
- 28 oz diced tomato, 1 can
- 6 cups vegetable stock
- 2 zucchinis, diced
- 15 oz cannellini bean, 1 can
- 3 cups spinach
- 2 cups pas
